Diddy Kong Racing (what it has a single-player mode)
Probably any Rock Band / Guitar Hero title
Jak and Daxter 1 (could probably 100% it as well, though some levels would prove to be frustrating (damn Spider Caves))
Zelda OoT
Zelda Majora's Mask (might be difficult to do all the sidequests though)
Spyro 1-3
Half-Life
Pokemon Channel (lol)
Pokemon Snap
there's some others but I feel that they'd either get dull if you tried to finish it in one sitting (like maybe Mario Sunshine) or that it would be kind of difficult to do in a day, like Retro Game Challenge (if it wasn't for Gaudia Quest...)

Bout the only games I know I can beat in a day (without attempting a speed run) are my various Ace Combat games. Although I can't unlock everything in just a day though...

A bunch of action games, so all the DMC games, MGR. Vanquish too, I sat and beat that in about 5 hours.
